Raw pudding recipe

A few young coconuts (they're off white)

Coconut water from the coconuts

A few dates

a vanilla bean

Get the food processor ready

Go to an asian market or Whole Foods or somewhere that they have these coconuts. Ask the guy or girl in the produce section to cut them in half and save the coconut water for you in a plastic container. You could cut them yourself, but it takes time, patience, and a big kife.

Go home. Scrape out all the coconut from the insides of the hollow shell. If the insides are grey, throw them out, because they should be white. Make a mental note to get your money back. If they are white inside, you are ok.

When you've scraped every bit from the shells, start throwing them in the food processor, along with some coconut water and a date or two or three. Also scrape the vanilla from the inside of the vanilla bean and throw that in. Keep adding and blending until the whole thing is like pudding. Good for you then.
